Method

  1. 1Drain and mash the beans with the sweetcorn.
  2. 2Sprinkle cheese and the bean mix over four tortillas and top with the rest.
  3. 3Dry-fry each quesadilla for 3 minutes a side until golden.
  4. 4Cut into wedges and serve.
